Unappetizing pictures!

Sometimes really delicious food makes unappetizing pictures.

Take Chicken Scarpariello, for example.  By the time the chicken is unctuous, the potatoes creamy, and the sauce tangy the dish is unappetizingly brown (at least in a photograph).  I discovered this when looking at the photographs I had taken for this blog post.

This is really a shame because the taste is superb.

We’re several weeks into planting our new vegetable beds but these herbs have been going strong since March 2021. They were cut back drastically last week to encourage growth.

Brown food can be challenging to photograph, especially brown food in a brown sauce.  Food stylists might solve this problem by using barely cooked potatoes that look pale and peppers that are still yellow and green, not really cooked as required by the dish.  This doesn’t represent reality.  The dish, cooked properly, will never look like the photograph.  This is an approach that I think is inherently unfair.

I’m willing to admit that some of the problem relates to my picture-taking ability.  My photographic ability isn’t great but even that meager ability sometimes suffers because I’m hastily taking photographs as I’m trying to put the food on the table.

If I weren’t doing that, I could carefully plate a piece of chicken with the potatoes and peppers artfully arranged off to the side, lots of white space on the plate, and a few colorful garnishes or side dishes.  I could even wipe a little of the sauce off of the potatoes to make them lighter in color.  All this would mitigate the “brown problem” but it just isn’t practical because the food I post on the blog is something that I actually made to eat at the moment it is ready.

I guess I could spend time carefully taking pictures and serve cold food but that approach wouldn’t last long in my household.

I could cook specifically for the blog and not worry about serving the food, at least not the day I cook it.  That would create a major leftover problem.  Besides, many dishes aren’t at their best when reheated.  On the other hand, many foods are better if made in advance.  So, I guess this is a partial solution to the problem that could work on a case-by-case basis depending on what the dish is.

I can think of other potential solutions but each has its problem.  This could include having a photographer arrange the plate and photograph it (presumably while I’m having dinner with the rest of the household).

We’re looking forward to a winter crop of tomatoes!

Alternatively, I could serve everyone then spend time arranging a plate to photograph, hoping to join the dinner table before everyone is finished.

I’ll keep working on a fix to the issue but, in the meantime, I encourage you to try this Italian-American dish.  It scales up easily so you can feed a crowd if you need to.  The leftovers are pretty incredible, too!

American websites, including the New York Times, usually say the name of this dish translates as Chicken Shoemaker Style.  However, you won’t find the word “scarpariello” in an Italian dictionary.  To be sure, the word “scarpa” means shoe but the Italian word for shoemaker is “calzolaio.”  Scarpariello, however, is the word for shoemaker in the Neapolitan dialect, which gives a clue as to which immigrant group might have been responsible for creating this Italian-American favorite.

Scarpariello means shoemaker in the Neapolitan dialect. This may give a clue as to the origins of this Italian-American favorite. The dish builds on a classic combination in the cooking of many regions of Italy: chicken cooked with wine and vinegar. The capers are optional. Use sweet or hot pickled peppers as you prefer or, if you want to spice it up, add some crushed red pepper when sautéing the garlic. If you don't have a stove-to-oven pot large enough to hold all the ingredients, do the browning in a large saute pan then assemble everything in a large baking dish.

Instructions
  1. Dredge the chicken in flour. Reserve.
  2. Peel the potaotes and cut in large chunks.
  3. Cut the Bell peppers in triangles
  4. Cut the onions in eighths
  5. In a large stove-to-oven pot, heat the olive oil. Brown the chicken, sausage, and potatoes. Do this in batches, if necessary.
  6. Remove everything from the pot. Cut the cooked sausage into 1 ½ inch long pieces.
  7. Add the garlic to the oil remaining in the pot and sauté until it is fragrant and golden.
  8. Add the bell pepper and onion, season with salt, and sauté until the onion is beginning to soften and turns gold and brown in spots.
  9. Add the rosemary and bay leaves and sauté briefly.
  10. Add the wine and deglaze.
  11. When wine is almost completely evaporated, return chicken, sausage, and potatoes to the pot along with any accumulated juices.
  12. Add about 1 cup of chicken broth and the vinegar along with the pickled peppers. Season well with salt, pepper, and oregano.
  13. Bring to a boil, cover, and put in the oven at 350°F.
  14. An hour later, stir the contents of the pot. Add the drained artichoke hearts and capers, if using. Add more broth if needed to keep the contents from sticking. Adjust the seasoning.
  15. Cook for another hour until chicken is very tender and potatoes are cooked through.
  16. Stir in parsley and serve.

Brasato al Barolo (Beef Braised in Red Wine)

Pre-pandemic my husband randomly chose a region of Italy.  Most of our meals for the month were traditional foods of that region.

In response to the pandemic, I reduced my marketing, with rare exception, to one supermarket trip once a week.  Obtaining the ingredients to create very specific regional Italian cuisine became difficult with such a shopping regimen.  Meal planning, though still Italian, reverted to dishes for which I could obtain the necessary ingredients at the supermarket supplemented by deliveries from Amazon.

Home-cured pancetta diced and ready to be cooked. Good quality pancetta can be purchased. Be sure to have it sliced thickly.

Amazon is my source for Italian flour, several types of which I use for making pasta, bread, pizza and cake.  Carnaroli rice can be difficult to obtain under the best of circumstances but is available on Amazon.  Some of the ingredients for gelato are impossible to find in retail shops making Amazon the go-to source.

Other items, like specific types of cheeses or cured meats or olives, can only reasonably come from local retail markets.  The same is true for produce and an array of other ingredients.  One marketing trip a week to a general supermarket made it impossible to gather many of the required ingredients so the one-region-a-month-cooking-and-eating regimen fell victim to the pandemic, at least temporarily.

I made food from Piemonte (Piedmont) while our region-a-month plan was still active.  Piemonte has cows, so beef and dairy figure prominently in the cuisine.  Piemonte is also home to Barolo, among other wonderful wines.

Piemontese food does not shy away from calories or flavor!

This dish makes use of two of the stars of Piemontese cuisine, beef and wine.  The most traditional recipes call for a whole filet.  The wine is traditionally Barolo.

Fresh bay leaves have tremendously more aroma than dried ones.

There was a time when Barolo was affordable.  It is no longer a budget-friendly wine and certainly not one that I would use to braise beef in, even if it’s filet.  If you’re interested in how Barolo became so well-known, watch the movie Barolo Boys.

It’s rare to find a modern recipe that simply specifies Barolo as the red wine.  Even when the traditional name of the dish, Brasato al Barolo, is used, the wine is rarely Barolo.  Calling this Brasato al Vino would be more accurate but that name doesn’t really convey the historic context of the dish.

I’ve made this with filet that I dutifully larded with my home-cured pancetta.  While the taste was good, the texture of filet after braising was not good, even with the larding.

After that first attempt, I decided to use a cut more commonly used for long, slow, moist cooking even if it was not as high-brow as filet.  Once I made that decision, I started doing recipe research that stretched beyond my several very traditional multi-volume sets of Italian regional cuisine published in Italy in Italian.  I discovered that other (iconoclastic English-speaing) cooks had made the same shift to “lesser” cuts of meat.

I particularly like brisket that’s been braised though a nicely marbled chuck roast would work too.

Fresh sage leaves are better than dried when it comes to flavor.

The dish was a hit when made with brisket.  Truth be told, the family didn’t care to ever have it again when I made it with filet.  With the textural change from the brisket it’s become part of our standard menu rotation.

This is a perfect dish for winter.  It’s great for entertaining as it is actually better if made the day before and reheated just before serving.

Oh, and if you actually make it with Barolo, please invite me to dinner!

Brasato al Barolo (Beef Braised in Red Wine)
Since Barolo is so expensive, most contemporary recipes call for another full-bodied red wine. I have used Zinfandel as well as an Argentine wine that was 60% Merlot and 40% Syrah with great success. The meat can be served without refrigerating first but refrigeration makes it easier to get neat slices. If not refrigerating, pour the hot sauce on the sliced meat and serve immediately. If you don’t have a stash of garlic oil on hand, smash two cloves of garlic and sauté in the olive oil until golden then remove the garlic.

  1. Combine beef with the onion, carrot, celery, garlic, and wine. Cover and refrigerate overnight.
  2. The next day, remove the beef and wipe dry.
  3. Strain the marinade. Reserve the solids and liquid separately.
  4. Dredge the beef in flour.
  5. Sauté pancetta in garlic oil over low heat until it renders its fat and browns. Remove pancetta and reserve.
  6. Brown the beef in the rendered fat. Remove the beef.
  7. Add the vegetables to the pan and sauté until softened and the onions are translucent.
  8. Add the tomato paste. Sauté the tomato paste briefly to darken and sweeten it.
  9. Add the reserved marinade to the pan along with the bay leaves, cloves, rosemary, sage leaves, cinnamon, juniper berries and peppercorns. Bring to a boil, scraping up any browned bits.
  10. Add the beef. Season with salt. Braise till tender, partially covered, approximately 3 hours.
  11. Remove the beef and refrigerate, tightly covered.
  12. Strain the braising liquid. Discard the solids and refrigerate the liquid.
  13. When the beef is cold, slice it against the grain and put in an ovenproof pan or casserole.
  14. Skim the chilled braising liquid.
  15. Heat the de-fatted braising liquid with the reserved fried pancetta.
  16. When the braising liquid comes to a boil, remove from heat and add the Marsala. Pour the liquid over the beef, cover the pan, and heat at 350°F for approximately 1 hour.

Penne with Roasted Garlic Cream Sauce

I apologize!

In my inaugural messages, I clearly stated that I would publish traditional recipes, many (though not all) of them Italian, but with the emphasis on traditional.

I get really stoked by the idea of preserving traditional recipes in written form (even if it’s a bunch of zeroes and ones on a cloud server somewhere)!

I also truly appreciate new and innovative dishes…especially cakes, for some reason.  But my very strong preference if I’m going to work on perfecting and publishing a recipe is to focus on traditional recipes.  (I’m happy to eat good food of any type, traditional or not, that someone wants to serve me, however.)

My editorial calendar for this blog, including what I’ve published and what I currently have planned to publish, numbers 212 recipes.  The number keeps growing.  Most of these recipes are ones I listed (off the top of my head, so to speak) when I was planning the launch of the blog in late 2016.  The list came from simply thinking about my favorite recipes.  As I trawl through my recipe archive periodically, looking for recipes for particular events, or even just dinner, I usually come upon at least a few more recipes that get added to the list.

Windows says I have 4133 recipes saved in my recipe directory.  That does not count the hundreds of hand-written ones that I’ve not scanned in yet.

But I have to admit, not EVERYTHING I make is traditional.  I have this killer salmon recipe that I got from the New York Times that is now a regular on our table.  Almost any vegetable recipe by David Tanis is a winner in my book, well really ANY recipe by David Tanis, but he has a way with vegetables.  He has many make-ahead-and-heat-up-in-the-oven options that remove a lot of last minute work when putting dinner on the table, whether it be for 2 or 20!

In my defense, these are recipes that I think will become classics in a few decades just as many of the recipes that I started cooking 45 years ago in college have become classics for me.  I think if a recipe still tastes good after half a century it can be considered a classic…which is getting pretty close to traditional.

Think about all the things you ate 50 years ago that you don’t make any more, like fried bologna simmered in ketchup!  That actually is something that my very traditional mother put on the table in the 1960s!  Granted, it was a main course (and I use the term lightly) that could be whipped up in under half an hour after a day’s work.  The truth is, I actually liked it at the time.

I differentiate the fried bologna category of foods that I don’t make any more from the fried salami category of foods that I still love but that just have fallen off my rotation.  Have you ever had a sandwich of pan-fried salami?  If not, give it a try.  (Thinly slice the salami.  Make a cut from the middle to one edge, like the first cut of a pie, to reduce puckering.  Cook in a skillet over medium heat till lightly browned on each side.  No oil needed.  Pile on bread.  Enjoy…dripping fat and all!)

So why the apologia?

Today’s recipe isn’t traditional.  I developed it about four years ago for dinner for a large group of people.  It was such a hit, that I kept making it.  I even made it last summer for a dinner party for the family from Tuscany!  So, while it’s not really traditional (which I take to mean something with a cultural history, something that individuals from a particular culture and location make or made on a regular basis), it has a very traditional FLAVOR.

I made this penne for my father-in-law’s birthday party this past January. Everyone had clean plates!

In my mind it’s not a REAL (i.e. traditional) dish because I made it up.  On the other hand, the flavor profile makes it fit into an established canon of northern Italian food.  Italians would recognize it as Italian food, just not traditional Italian food.

Because it isn’t traditional, I hadn’t planned on publishing it.  I got a number of requests for the recipe after I mentioned it in one of my emails and decided that I should reconsider my initial decision.  There aren’t many photographs but the steps are not really complicated.  I know you can do it without all the usual photos.

Who knows, maybe in another 45 years it’ll become a classic!

Penne with Roasted Garlic Cream Sauce
This takes some time to put together but once it’s assembled you can spend time with your guests while it cooks. The sauce has a luxurious amount of butter, about twice what would typically be used based on the amount of flour. This improves the flavor and mouth-feel of the sauce. Because I originally created this dish for an event in Alamogordo, New Mexico, I topped it with pistachios which are grown there. Chopped walnuts or whole pine nuts could be substituted. If you want to prepare the dish in advance, be sure to cool the pasta in a bowl of ice water. Mix the cooled pasta with cold white sauce and the other ingredients. Pour into a baking dish, cover tightly, and refrigerate. Allow the covered dish to sit at room temperature 60-90 minutes before baking.

Balsamella (White Sauce)
  1. Put the garlic in a single layer in a small oven-proof dish with a tight-fitting lid. Alternatively, put the garlic on a sheet of heavy-duty aluminum foil.
  2. Sprinkle the garlic with olive oil.
  3. Put the lid on the dish, or fold up and seal the aluminum foil.
  4. Roast the garlic at 300°F until soft and golden brown, approximately 45 minutes, stirring occasionally.
  5. Put the garlic and any olive oil you can scrape out of the dish into a blender jar.
  6. Add 1 cup of the milk.
  7. Puree the garlic and milk. Reserve.
  8. Warm the remaining milk in a heavy-bottomed saucepan.
  9. Melt the butter in another heavy-bottomed saucepan over medium heat. Stir the flour into the butter.
  10. Cook for a few minutes on medium heat but do not allow flour to color.
  11. Stir in the warm milk, one ladleful at a time, incorporating well after each addition to avoid lumps.
  12. After about half the warm milk has been incorporated, add the pureed garlic mixture.
  13. Use some of the warm milk to rinse out the blender jar and add it to the pot. Stir well.
  14. Add the remaining milk to the pot along with the bay leaves, rosemary sprigs, and lemon zest.
  15. Bring to a boil over medium high heat stirring (nearly) constantly and cook until the sauce reaches the thickness of heavy cream, approximately 5 minutes.
  16. Strain the white sauce through a fine-mesh sieve.
  17. If not using the sauce immediately, cover it with plastic wrap, putting the plastic directly on the surface to prevent the formation of a skin, and refrigerate. [If you are going to prepare the casserole in advance, make sure the balsamella is cold before combining with the other ingredients.]
Final Assembly
  1. Put the frozen peas in a large sieve. Rinse with cool water to thaw the peas. Allow the peas to drain and completely thaw while proceeding with the recipe.
  2. Heat the olive oil in a large sauté pan over high heat.
  3. When the oil is hot, but not smoking, add the diced mushroom caps. Toss well.
  4. When the mushrooms have absorbed the oil, add 1 teaspoon of fine salt. Mix well.
  5. Turn the heat to medium low until the mushrooms begin to sweat.
  6. Turn the heat to high and continue sautéing until the liquid evaporates.
  7. Continue to cook until the mushroom pieces are browned in places.
  8. Season with black pepper. Add ham and cook 2-3 minutes.
  9. Remove from the heat and reserve.
  10. Bring a large pot of heavily salted water to a rolling boil. Add the pasta.
  11. Boil until the pasta is partially cooked. It should still be a little crunchy on the inside.
  12. If you are going to cook the casserole immediately, drain the pasta but do not rinse. If you are going to assemble the casserole in advance, drain the pasta and chill it in a bowl of ice water. When cold, drain well.
  13. Combine pasta, peas, mushroom and ham mixture, and balsamella. Mix well.
  14. Pour into a large buttered casserole. For this quantity, I use a full-size steam-table tray, also called a “hotel pan.”
  15. Put a sheet of parchment on top then cover the pan tightly with heavy-duty aluminum foil. You can skip the parchment if you are going to cook the casserole immediately. Food should not stay in extended contact with aluminum, hence the parchment paper if the dish is being assembled in advance.
  16. Either refrigerate or bake at 350°F until bubbly. Baking time will depend on whether the ingredients are hot or previously refrigerated and brought to room temperature, 1 ½ to 2 hours.
  17. Remove the foil and parchment. Sprinkle the top with Parmesan cheese and nuts.
  18. Place under the broiler, or on the top rack of an oven heated to 500°F, until the top is golden brown.
  19. Allow the casserole to rest at least 15 minutes before serving.

Carne di Manzo in Umido (Thinly Sliced Beef in Tomato Caper Sauce)

As I am writing this, my husband’s Great Aunt Fidalma and cousin Massimo are visiting us from Tuscany. We’ve had quite a week of eating and drinking.  Every night, actually, was something like a party. At the lowest head count we were 6, but more often 9, and once 20!

Last night I fried a bunch of zucchini flowers to accompany cocktails. Zia Fidalma made little elongated meatballs (polpette) with ground beef and mortadella seasoned with onions, garlic, and herbs. I made risotto with mushrooms and my mother-in-law made long-simmered green beans in tomato sauce, something like my green beans in tomato sauce with bacon.

While we were sitting at the table after dinner doing what Italians do (talking about growing food, talking about preparing food, talking about food we’ve eaten, and talking about the next meal) Zia Fidalma started to describe a dish of thinly sliced beef cooked in tomato sauce with capers.

“Carne di Manzo in Umido!” I said.  She concurred.

I told her that Carne di Manzo in Umido was, in fact, the long-planned blog post for Wednesday.

It is a dish I had at her home in Tuscany about 20 years ago. I wrote down the recipe in a combination of English and Italian and American and Metric measures sitting at her kitchen table. It took me a while to get it right but I think I’ve nailed it.

Here’s a quick rundown of the food we’ve had over the past week:

August 23rd: Pasta with Zucchini, Chicken Thighs braised in Red Wine and Balsamic Vinegar, Salad, Cherries in Brandy, Homemade Limoncello, and Homemade Bay Leaf Liqueur (being posted in October).

August 25th: Zia Fidalma’s Rouladen (German, I know, but Zia Fidalma lived in Germany for many years), Mashed Potatoes, Corn on the Cob and, you guessed it, more Cherries in Brandy, Homemade Limoncello, and Homemade Bay Leaf Liqueur.

August 26th (for 20 people): A Massive Antipasto Platter thanks to cousins Paul and Kim Phillips (and a shopping spree at Cheesemongers of Santa Fe), Baked Penne with Ham, Peas, Mushrooms and Roasted Garlic Besciamella, Porchetta, Corn Sautéed in Butter, Sformato di Spinaci, and Italian Almond Torta with Raspberries and Plum Crostata (thanks to Rich DePippo). Then there were those ever-present Cherries in Brandy, Homemade Limoncello, and Homemade Bay Leaf Liqueur.

August 27th brought some sanity as we had leftovers from the 26th. (We could still feed a small army with the remains of Paul and Kim’s Antipasto Shopping Spree.)

August 28th: As described above, meatballs, risotto, and green beans.

I neglected to mention that we went through cases of wine and then there was a dark chocolate cake from Chocolate Maven Bakery in Santa Fe that kept making its appearance most nights right before we broke out those cherries.

Eating will slow down a bit now that the relatives have left. As I finish writing this the house is perfumed from a large pot of chicken broth that will get portioned and frozen ready to be pulled out of the freezer in the coming weeks for wave after wave of risotto made with the freshest vegetables the market has to offer.

Instructions
  1. Herbs, clockwise from top right: nepita, bay leaf, sage, rosemary, oregano.
  2. Combine the flour and 1 ½ teaspoons of salt. Mix well.
  3. Pound the steak lightly with a mallet.
  4. Season the steak with salt and pepper. Cut the pieces in half if they are too large after pounding.
  5. Dredge the steak in the seasoned flour and reserve. It is best to do this about an hour in advance as the flour will adhere to the meat better.
  6. Bruise the garlic with the side of a large chef’s knife.
  7. Put a thin film of olive oil on the bottom of a very large sauté pan. Heat over medium high heat.
  8. When hot, add as much of the beef as will fit without crowding in a single layer. Add half the garlic.
  9. Sauté the meat and garlic until the meat is browned on both sides.
  10. Remove the browned meat to a platter. Repeat with the remaining meat and garlic, in however many batches are needed.
  11. If the garlic starts to turn dark brown, remove it or it will become bitter.
  12. When all the meat is browned return it to the pan with any accumulated juices. Leave the cooking oil in the pan.
  13. Try to arrange the meat so that the pieces overlap rather than putting one piece of meat directly on top of another.
  14. Add all the other ingredients except the capers.
  15. Cover and simmer gently until meat is tender flipping the meat every 20 minutes or so. It will take at about one and one-half to two hours to get the meat tender depending on the cut and your elevation.
  16. Add water from time to time if the sauce boils away.
  17. Rinse the salt off the capers and add them during last five minutes of cooking. Taste and adjust salt and pepper.
  18. There should be a very small amount of sauce along with oil that is red from the tomato. Do not remove the oil, it adds significantly to the mouthfeel of the sauce.
